One of the great new hospitality dinnerware collections seen at this past week’s Ambiente was the SHIRO collection from Germany’s Shonwald Porcelain. The simpleness of the collection, combined with the clean, honest design lines of the shapes were what drew us to new SHIRO first and foremost. The item in the collection that we immediately fell in love with was the coupe bowl. Minimalist in its design, Schonwald’s new SHIRO has clean lines and a striking collection of coupe shaped items that blends Scandinavian solidity with Japanese gracefulness. The SHIRO collection has been designed by today’s hot industrial designers Stefan Diez and Andrea Lenardin. Made to elevate further today’s artisanal cuisine, SHIRO provides a solid food presentation foundation for chefs while remaining straightforward and uncomplicated. From the profile and silhouette, to the angle of its bowl sides, …. To the narrow-edge rim… these SHIRO deep plates will work for everything from starters to desserts.
So, while we don’t know what Libbey’s plans are for new SHIRO from Schonwald, we certainly hope that we’ll be seeing this hot new dinnerware in Chicago in May.

Honest cuisine made from fresh ingredients, preferably regional, vegetarian or vegan, good for the body and mind, is sought-after. To make sure that guests can experience this pleasure with all their senses, the food is showcased on a special stage: natural stone is in great demand. Slate, a natural stone that is in demand, consistently shows new patterns, structures and patterns in its many rock layers. The color spectrum, ranging from black to green through to orange, was created millions of years ago when many different metals between the layers oxidized. For THE ROCK range, Villeroy & Boch translated the characteristic, raw structure of German slate into an unusual design using modern manufacturing technologies. Decorative highlight: the transition area between the lip and the coupe recreates the brittle chipped edge, which used to be worked on by a hammer in the traditional production of shingles. The typical, lightly splinted structure of this edge was adapted for THE ROCK to provide an artisanal look while giving the plates additional authenticity. All THE ROCK products from Villeroy & Boch have a solid-colored biscuit porcelain and a special glaze. The range plays with two different structures: All coupe parts are decorated with a fine slate relief over the entire surface, which looks very real and accentuates the sleek design. Plates and saucers that have a lip and well only have the relief structure on the lip. The visible edges in the transition area from well to lip have a chipped edge. THE ROCK is available in two colors inspired by the natural stone colors of slate. The deep black Black Shale and the White Glacier allow food to be enhanced visually and served with a colorful wow effect. New products joined the existing range of THE ROCK in 2019, extending its versatility. Glass breakfast and mocha cups beautifully complement the black and white ceramic saucers, their stylish mix of materials creating quite a stir on the table. A bowl and a shallow bowl round off the range. Thanks to the new products, THE ROCK can now also be used at breakfast, coffee or tea time, and no longer just for lunch or dinner. Villeroy & Boch’s THE ROCK was adapted to selected products and existing shapes of Dune and Marchesi, so the range can be mixed and matched creatively with other pieces or simply integrated into an existing set.

The sizes of the flat coupe plates range from a 15-centimeter (5.9") side plate to a 32-centimeter (12.6")charger. Suitable not only for soups and salads, these deep coupe plates – measuring 21 (8.3") and 28 (11") centimeters respectively – are veritable “all-rounders”. Chefs love them because they provide unlimited scope for the interpretation and presentation of their creations.

And, in their greeting, they took a moment to give a few tips on making good decisions on the selection of hospitality tabletop, specifically dinnerware. We thought we'd pass these along, proving that - while there are many ways that restaurants and hotels can get their dinnerware - working with true tabletop professionals is the way to go throughout the world. 7 Things to Consider when buying Dinnerware/Crockery 1. Budget – Know how much you want to spend on the dinnerware. Prices range varies from item to item depending on quality. However remember that high quality dinnerware is ultimately a lasting investment. 2. Number of people – How many people the dinnerware is intended to serve, the frequency of washing is key in determining what to buy. Banqueting and outside catering functions need more lightweight and durable/toughened crockery compared to fine dine outlets. 3. Level of formality and purpose – the right dinnerware is also dependent on how it is used. Foodservice operators should choose dinnerware that matches the environment they want to create and/or theme of their outlets. 4. Material – Dinnerware can be made from a variety of material i.e Porcelain, Glass, Bone China, Earthenware, stoneware, ironstone or melamine. Depending on the use, the material becomes a point of reference. 5. Number of pieces – Buyers should always choose dinnerware with pieces that seem most practical based on their culinary preferences. Some ranges are not complete hence the reason to prefer complete ones if need be. 6. Replaceability and Continuation – When buying a dinnerware, consider how easily a particular item can be replaced and if a range is continuing. Consider a range that is likely to remain around or can be complimented/matched with others. 7. Shape, Color and pattern – No buyer should be limited in his or her choices of dinnerware. There is much more available in different shapes, colour and pattern. The theme of your outlet, tastes and preferences should guide you accordingly. In a tabletop design world world where much looks the same, Odd Standard is a company that definitely has taken the road less traveled. Our video interview is above. The ambition at Norwegian design firm Odd Standard is to make great products for chefs and restaurants; exploring different materials, old craft techniques and modern technology. Some odd and some standard, the products are meant to come in limited numbers, from their own workshop and from their portfolio of very skilled collaborative craftspeople. Who is Odd Standard? Constance Gaard Kristiansen and Tonje Sandberg, are two Norwegian product designers with extensive background from development and production of tableware. They worked together in Figgjo for many years, and while working alongside one another, found a common fascination for the experience of eating, and how tableware products could enhance this experience. Wanting to explore all the possibilities that different materials and techniques offer, they started the firm Odd Standard in June 2014.
With lots of innovative dinnerware products at the just completed Host Milano 2015, few were more interesting than Italy's Royale and their SU MISURA collection. In a market which favors standardized products, Royale decided to focus on a unique “Made to Measure” collection inspired by emotions and feelings. SU MISURA is their collection of handmade tableware of pure Italian porcelain and decorated by hand. Royale is alos the Italian agent for the famed UK dinnerware brand Dudson. Royale is a global tabletop company, 100% Made in Italy, of oven-proof and buffet porcelain items. An idea born in 1986 when it was felt that what was missing a source able to satisfy also the small and peculiar requests of a more demanding customers, more and more exigent and attentive to cooking and table presentation of the product. At the beginning, the production was limited to a range of big- sized items, created exclusively for specific clients; in 1990, the growth of the Royale brand name in the Italian market allowed the definitive launch of the Royale oven-proof porcelains, along with the construction of a new building equipped with the latest manufacturing machines.

Italy's Royale: New SU MISURA Dinnerware Brings Handcrafted Emotion to Restaurant Tables It's the hospitality business so it should be FUN....right? Well, Cardinal International is keeping it fun here in the U.S. by sponsoring the Art of The Plate contest with Chef's Roll.
